I improvise, like on the hummus I made. . .

The recipe was from an ezine article and was very simple. Use a 15 oz. can of chick peas or garbanzo beans (same thing, just two names) Add 2T tahini, 2T extra virgin olive oil, juice from a whole lemon, and one half tablespoon of salt, 2 Cloves of garlic. Process in blender or food processor.

Here is what else I did: 1 tsp cumin, 1 tsp tumeric (both pretty traditional), and non traditionally, I put 2 Tbsp. flax seed meal. After it was all processed I also sprinkled on about a tsp of cilantro and stirred it to give it some color.

I have seen other recipes with tumeric and cumin. These are seasonings that are anti inflammatory, supposed to help arthritis. Tumeric gives it a yellow color. Flax seed meal is also very good for a lot of ailments and adds fiber and Omega 3's. I have also put crushed black olives in it before.
I have a hard time following a recipe to the letter. How about you? Do you have a favorite dish that you have put a special spin on?

Do you like garbanzo beans?

I love them. For many years I had to eat them at my mom´s house as my hubby hated them. After he died, I startedto make some food he couldn´t eat for his illness and other he did not like. Garbanzo was one of them. I make it with pork legs. It gives it a wonderful taste. Many times I also put some rice.
How do you make them? What do you do with them? I´d love to try new recipes.
Happy posting to all!!!

I made some hummus last night.

It is one of my favorite things to have as a dip. It is a Middle Eastern dish made from Garbanzo beans or Chick Peas. Either name works. I have bought it before, and made it before and it is really simple. I enjoyed it as a side dish when I had dinner with Grandpa Bob in the restaurant where Debbie works. Have you tried hummus? Do you like it? Have you ever made it?

Which Vegetables Have The Most Fiber?

Last week I was having an "annoying little problem" that comes with not eating enough fiber, if you get my drift. I guess my diet had been a little off for a few days, and I ended up paying for it by being wide awake and uncomfortable at 2 AM. I understand vegetables have a lot of fiber in them, and solve the problem easily. Which vegetables have the most fiber, and are best for fixing irregularity?

Garbanzo Bean Burgers

I make a variation of this recipe, which I found at vegsource.com, often and I really like it. It reminds me of falafel, and I will use tahini dressing as a condiment, along with onion, tomato, and lettuce.

Garbanzo Bean Burgers

2 cups cooked garbanzo beans, mashed or run through a food processor
1 stalk celery, finely chopped
1 carrot, finely chopped
1/4 small onion, minced
1/4 cup whole wheat flour
Salt (opt.) and pepper to taste
2 TB oil

Mix ingredients, except oil, in bowl. Form mixture into 6 patties. Fry in oiled pan over medium-high heat until burgers are golden brown on each side.

To make the burgers low fat, I bake them on a greased cookie sheet for 25 minutes at 425 degrees.

I keep homemade crushed red pepper oil on hand to use as a simple condiment and flavor accent. I call it fire oil, and it couldn't be easier to make. Sprinkle crushed red pepper flakes in hot olive oil, let it cool, and ignore it. The flavor lights up over the next day or two, and the longer I leave it, the better. I also make hummus regularly to eat as an afternoon snack, but until now it hadn't occurred to me to combine these two favorites. So here you have it, a hummus of sorts made from pureed garbanzo beans, toasted walnuts, and spicy crushed red pepper oil. The rustic red pepper flecks and translucent olive oil are set against the creamy backdrop of the pureed beans. To finish things off, I couldn't resist a few oily, black olives and chopped cilantro - both of which I had on hand...

Enjoy.

The Mylot cooking show... take a list of ingredients and make a menu.

I am remembering those cooking shows in which someone is given one ingredient or a list of ingredients and then is told to make a dish or meal out of them...
Wondering if you ever have watched these cooking shows?
If you have watched these shows or even if you just like the idea of a challenge...
Here is one for you...

What would you make with:
a container of firm tofu,
a small amount of frozen veggies (spinach mostly and a little bit of peas and corn)
a small amount of crushed pineapple,
a can of coconut milk,
a box of tomato sause
some pasta of the fettuchine or rigatoni variety,
a can of garbanzo beans,
a can of refried beans,
some vegitable broth,
some frozen raspherries,
whole wheat flour,
3 eggs
butter, olive oil and or canola oil
I have also a lot of spices to choose from...

Does anyone have any suggestions for a possible menu using only the ingredients listed?
Remember that you need use only the ingredients that you wish to use from this list...

Ready. Get set. Let the Contest begin. The one who comes up with a menu that I can use will get best response.
All other participants will get good ratings... my promise.

One of the dishes served was comprised of chickpeas/garbanzo beans and spices and had Pita bread (Lebanese flatbread) either fried in some kind of butter or brushed with butter and baked and this was craushed and stirred through the chickpea/garbanzo bean mixture. It was topped with Lebneh (Middle Eastern type yogurt) I would LOVE to have a recipe for this dish. I am not a huge fan of pulses, but this was delicious! Does anyone have any ideas?

ever have a stew in a pumpkin?this is a awesome receipe i got from my mom.

first you will need a well shaped 5 to 6 pound pumpkin, salt and pepper,butter,2 pounds of stew beef, cut in 1 inch cubes,1/4 cup of flour, 2 tbsp. cooking oil, 2 cloves, garlic, minced, 1 large onion sliced, 1 cup of red wine, 2 cups of beef broth, 1/2 tsp.salt, 1/2 tsp.thyme, 1 bay leaf, 1 cup of peeled tomatoes, 2 med zucchini, sliced, 1 can garbanzo beans drained.2 carrot,sliced,2 potatoes peeled and cooked. remove lid of pumpkin and retain for later use.scoop out seeds and stringy portion.score inside several times, then rub interior surface with salt and pepper.place pumpkin upside down in a large shallow pan, place the lid pan beside the pumpkin.add 1/4 inch water and bake at 350 for an hour or so or intil tender.remove pumpkin from oven.drain water and return upright pumpkin to baking pan.rub inside surface with butter.drenge meat in flour, brown in oil with garlic.add onions and simmer until soft. stir in wine, broth, and seasonings and cook over low heat until meat is tender i would say about 1 hour.then add all your vegetables and simmer for 45 minutes.spoon stew into warm pumpkin.you can also eat the pumpkin pulp with the stew if desired.enjoy

Beans do you like beans? either you do or you don't?

My mother use to cook beans all the time when I was a kid, that why I don't eat them much.
